Line a small brownie pan with grease proof paper.
Put the rolled oats in a food processor and blitz to a rough flour (about 10 seconds)
With the processor running, add the chopped dates through the feeder.
Add the almond butter, the vanilla and finally the melted coconut oil. Process until combined.
Remove from the processor and press the "dough" in to the lined brownie pan.
Sprinkle evenly with coconut and press down.
Cover and place in the fridge for 30 minutes.
Remove from fridge and cut in to squares. Store in an airtight container.
