My Nana's Sweet Caramel Kisses

My Nana's Sweet Caramel Kisses recipe is a raw, vegan version of the original caramel kiss. Chewy, fudge caramel squares sprinkled with coconut.

Ingredients 

  • ½ cup rolled oats
  • ½ cup almond butter
  • 10 - 12 medjool dates pitted and chopped
  • 1 ½ teaspoons vanilla extract
  • 2 tablespoons coconut oil melted
  • ¼ cup desiccated coconut

Instructions

  • Line a small brownie pan with grease proof paper.
  • Put the rolled oats in a food processor and blitz to a rough flour (about 10 seconds)
  • With the processor running, add the chopped dates through the feeder.
  • Add the almond butter, the vanilla and finally the melted coconut oil. Process until combined.
  • Remove from the processor and press the "dough" in to the lined brownie pan.
  • Sprinkle evenly with coconut and press down.
  • Cover and place in the fridge for 30 minutes.
  • Remove from fridge and cut in to squares. Store in an airtight container.
