Sam Turnball's 15-Minute Peanut Noodles

Sam Turnbull's 15-Minute Peanut Noodles are ready in under twenty and full of fresh and full-bodied flavours.

Ingredients 

For the Peanut Sauce

  • ½ cup natural peanut butter crunchy or smooth
  • ½ cup water
  • 3 tablespoon soy sauce
  • 2 gloves of garlic minced
  • 2 tablespoon fresh lime juice 1 lime
  • 1 tablespoon maple syrup or agave
  • 1- inch piece of ginger peeled and minced
  • 2 teaspoons of your favourite hot sauce optional
  • 1 teaspoon sesame oilFor the Noodles
  • 6 oz 170 grams of vegan chow mien or rice noodles
  • 1 red bell pepper capsicum, chopped
  • 1 medium carrot peeled and chopped in to matchsticks
  • 2 green onions chopped
  • ¼ cup peanuts salted, roasted or raw
  • Handful of cilantro coriander, chopped

Instructions

  • For the peanut sauce, in a small bowl, stir the sauce ingredients together and set aside.
  • Cook the noodles according to the package instructions. Drain, and return them to the saucepan. Add the peanut sauce, carrots and bell pepper and toss well to combine.
  • Garnish with the green onions, peanuts and cilantro and add more hot sauce if you like.

Notes

Sam's dish is super versatile and would also work with chopped cucumber, tofu, finely sliced cabbage, cooked edamame beans, basil or snow peas.
