Not Quite Shoo-Fly Pie

Not Quite Shoo-Fly Pie is a light, sweet twist on the original Shoo-Fly pie.

Ingredients 

  • Not-Pie
  • ¼ cup molasses
  • ¼ cup maple syrup
  • 2 flax eggs or regular
  • 2 teaspoons baking soda gluten-free is required
  • 2 and a ½ cups almond meal
  • 1 cup boiling water
  • 2 teaspoons ginger
  • 1 teaspoon vanilla extract
  • pinch sea salt
  • Crumble
  • 2 tablespoons almond meal
  • 2 tablespoons coconut sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Pre-heat the oven to 175 degrees C and line a small cake pan.
  • Whisk together the flax eggs with the molasses and maple syrup.
  • Stir in the vanilla, ginger and salt.
  • Whisk in ¾ cup boiling water.
  • Add baking soda and stir well. It should bubble, if it doesn't you need new baking soda.
  • Add ¼ cup boiling water.
  • Stir in almond meal.
  • Spoon batter in to the cake pan.
  • Combine crumble ingredients and sprinkle over the top of not-pie.
  • Bake in the oven for 30 - 35 minutes.
  • Allow to cool completely before serving.
