1medium carrotpeeled and chopped in to matchsticks
2green onionschopped
¼cuppeanutssalted, roasted or raw
Handful of cilantrocoriander, chopped
Instructions
For the peanut sauce, in a small bowl, stir the sauce ingredients together and set aside.
Cook the noodles according to the package instructions. Drain, and return them to the saucepan. Add the peanut sauce, carrots and bell pepper and toss well to combine.
Garnish with the green onions, peanuts and cilantro and add more hot sauce if you like.

Sam's dish is super versatile and would also work with chopped cucumber, tofu, finely sliced cabbage, cooked edamame beans, basil or snow peas.
