Ingredients 

  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 ripe avocados
  • ½ cup raw cacao or cocoa
  • 1-2 tablespoon instant coffee
  • pinch of sea salt
  • 1 tablespoon water if needed
  • ½ tablespoon olive oil
  • 1 cup granola (optional)
  • ½ cup desiccated coconut (optional)
  • ½ cup chopped almonds (optional)
  • handful fresh or dried blueberries

Instructions

  • Combine granola, chopped almonds and coconut in a small bowl.
  • Beginning with liquids, add maple syrup, vanilla, avocado, cacao,coffee and sea salt in a food processor and blend until smooth.
  • Add water if needed.
  • With processor still going, add olive oil. Adjust to taste.
  • In a small glass or jar, spoon a layer of granola followed by a layer of mousse. Repeat to the jar rim.
  • Sprinkle with blueberries and serve
