Step 1: Sauté the shallots and garlic before adding the mushrooms and thyme.
Step 2: Stir in the milk, soy sauce and curry powder and then add the stock and pasta.
Step 3: Cook for 12-13 minutes, stirring regularly, until the pasta is almost al dente.
Step 4: Remove from the heat, add spinach and butter and allow to sit for 5 minutes.
