I love any treat that can be on the table, or more importantly in my belly, in twenty minutes. I eat raw nuts but sometimes you want a little somethin’ somethin’ – nuts with benefits. We have a sweet and salty organic popcorn here in Australia called Cobs and it is wonderful so I thought I would play with the flavours and yet another random product I bought at the grocery store, an organic bag of mixed nuts. I do this, I buy things I don’t really need and don’t really have any plans for. See Super Quick Spicy Tomato and Chia Relish. Does anyone else do this or is it just me?
Anyhoo, these nuts are sweet and spicy with a hint of cinnamon and a little heat just at the end. The perfect snack or gift.
Spicy Sweet Roasted Mixed Nuts
3 cups mixed nuts (I bought a mixed bag but cashews, almonds, macadamias and brazil nuts will all work great. Use what you have! Make it easy for yourself)
1 tbs coconut oil
1 heaped tsp smoked paprika
1/2 tsp sweet paprika
1 1/2 tsp ground cinnamon
1/2 tsp cayenne pepper
3 tsp coconut sugar or any unprocessed sugar
several pinches of sea salt
Preheat oven to 175 degrees C. Line a baking tray with parchment.
Combine the dry spices together in a small bowl; not the sugar. In a larger bowl mix the spice mix through the nuts. Gently heat the coconut oil and carefully pour it over the seasoned nut mix. Add coconut sugar and mix really well, get in there, use your hands. Lay the mix out evenly on the baking tray and sprinkle with sea salt. Bake for 10 – 15 minutes or until roasty but not black. Remove from the oven and allow to cool on the tray. Store in an airtight container or do like me and just eat them! These are great for an inexpensive, homemade Christmas gift. Add ribbon and a tag to a lovely jar and your done. Enjoy.
