Need some simple pantry meals? Who doesn’t, right?

We are in uncharted territory here. My little family is in lock down and all the feelings are here. Like everyone, we are feeling restless, frustrated, unsure, a little wired, thankful for our health, scared, grateful for each other, annoyed at each other and love. Staying home is an act of love.  A commitment to making the world safer for each other and for all the other families we know and those we don’t.  So we stay. And hope.

BUT, cooking can be tricky and nourishing ourselves even trickier with limited access to groceries. So, I’m pulling together a weekly collection that relies heavily on pantry items. These simple pantry meals are flexible, sustaining and delicious. Here we go…week 1.


5-Ingredient Pumpkin Lentil Soup with Ginger

Pumpkin lentil soup with ginger in 5 steps? Here we go, the first of our simple pantry meals for this week.

  1. Take your soup pot and sauté an onion over medium heat
  2. Throw in chopped pumpkin, dried red lentils, stock and grated fresh ginger,
  3. Step away.
  4. Step back.
  5. Blend up the soup and serve.

You can blend this soup as much or as little as you like AND when it’s cool you can freeze it for later. It will keep for up to 3 months in a sealed freezer-proof container.

 Vegan Loose “Meat” Sandwich

With lentils, fresh and dried mushrooms and a smattering of dried herbs this vegan loose “meat” sandwich filling can be used in a sandwich or as a fantastic pasta sauce. Simple to prepare and easily freezable, it makes a wonderful go-to pantry meal.

Vegan Shawarma with Roasted Jackfruit

Easily one of my top 5 recipes on the blog, this vegan shawarma with roasted jackfruit is made with canned young jackfruit and chickpeas. It is the ultimate simple pantry meal! Roasted with red onion, lemon and garlic this Middle Eastern staple is full-flavoured and so simple to prepare. Serve it on a pita with hummus or simply with rice. Jackfruit freezes well; simply allow it to cool after roasting and store it in a sealed freezer-proof container in the freezer for up to 3 months.

 Chickpea Tomato & Spinach Curry

The most popular recipe on this blog, my walk-away chickpea tomato and spinach curry is healthful and delicious. Protein rich chickpeas add bulk while the Vitamin C in the tomatoes aids in iron absorption. The feedback I’ve received is that this recipe is super family-friendy (you can make this curry as mild as you like) and the recipe works every time. Besides, who doesn’t love a recipe you can simply walk away from?

This pantry meal freezes beautifully and will keep in the fridge in a sealed container for up to 5 days.

Fancy Poor Man’s Potatoes

Have you tried patatas a lo pobre? Poor man’s potatoes is a rustic Spanish dish made from potatoes, onions and sometimes peppers. This “fancy” version includes olives and jarred artichoke hearts. You can add your own spin with whatever you have in the pantry. Try chickpeas, lentils or some fresh greens. Easy to make from easy to source ingredients.
