While I’ve made scrambled tofu one hundred different ways, this gorgeously soft, lightly spiced version, inspired by the clever cooks at Smith & Daughters, is hard to beat. With pan-fried tofu, garlic and peppers tossed through a wonderfully creamy, cheesy sauce this Soft Scrambled Tofu is the perfect partner to a lazy Sunday morning.

SPICED EGGPLANT BRUNCH PITAS

With steamed eggplant tossed in cumin and coriander spices, hummus, mint and a yoghurt dressing on warm spiced pitas, these rounds are quick, easy and ridiculously yum.

3-INGREDIENT VEGAN ZUCCHINI SOUP

Ready in 20-minutes my vegan zucchini soup is deliciously creamy and smooth with only 3-ingredients. If you are looking for a quick and tasty weeknight meal, this is it. 3 Ingredients!

CRISPY TOFU LEMONGRASS BOWL

Ohhhh, cold soba noodles entwined with raw zucchini noodles, gently massaged kale leaves, crispy skinned tofu and a spicy lemongrass dressing. Hello, Lunch. 

SWISS CHARD STEW WITH  PIMENTON AND LENTILS

Simple to make, this Swiss chard and pimentón stew with lentils is a full flavoured bowl; robust and wonderfully Spanish.

VEGAN LOOSE MEAT SANDWICH

OK, this 10-minute chilli  might be 11 or 12 minutes but it really is super quick and packed with flavour. From start to finish it is ready in minutes. I use canned back beans and chickpeas and serve it with leftover quinoa. 

EASY SWEET POTATO CHOCOLATE FUDGE SQUARES

These gorgeous little squares come together simply in a blender, set in the freezer and are good to go once set as a smooth, dreamy fudge square.

NO BAKE PEANUT BUTTER CHOCOLATE OAT SQUARES

“I could eat these squares for days, they’re perfect,” my omnivorous husband said. Pretty nifty praise for a treat that took a few minutes to whip up and contains no dairy or processed sugars.
