Wow, I feel lighter. I have been carrying around that burden for the longest time. At dinner parties, birthday parties, any parties when the host, face beaming with pride, toddles out their world famous baked passionfruit, mango, raspberry from New York cheesecake. My “oohs” are fake and my “aahhhs” lacklustre. I am a crap guest. To those who worked so hard in the kitchen that day, I am sorry.
So Amanda, why are you posting a cheesecake recipe then? Well, I’m glad you asked random voice in my head. I don’t like dairy cheesecake. I am a huge fan of vegan cheesecake. Soaked cashews whipped in to silk and set in the freezer is something I can get on board with. This cheesecake, the cherry ripe cheesecake, looks like it took hours to assemble with its many layers. But each layer is simple and quick. Raw is awesome like that. I baked the Oreo base but that is optional.
